Bananas get a bad wrap in some diets, mostly from the sugar haters and the low carb crew, but I consider them natures vitamin capsule and snack bar rolled into one.  Comes in it's own handy wrapper, easy to eat one handed and a good source of potassium and magnesium making them great post workout for replenishing electrolytes.  Bananas are also a good source of tryptophan, which the body converts to serotonin, the happy hormone, so you could say bananas make you happy!

If you're a fan of them whilst they are still virtually green, they are great for aiding digestion and regulating blood sugar.  Once they start getting those little black spots on the skin, I'm less inclined to eat them, but they are still packed with nutritious goodness, and become great to cook with, so should never go to waste.  If you need want to save them for when you have more time to cook/bake, they do freeze well.

Here's my quick go-to recipe for yummy banana pancakes, using those bananas that feel neglected,

  • 1 mashed banana
  • 1 serve protein powder
  • equal serve quick cook/easy oats
  • 1 egg
  • water or almond milk
  • baking powder

Mix all dry ingredients and banana in the bowl, add wet ingredients to make a thick batter, and cook in a well greased pan (use real butter or coconut oil spray)

Enjoy with honey and creme fresh for a delish indulgence
